Food Safety and HACCP is the process of Hazard Analysis and Critical Control Points, which is done for the food processing matter. In this type of system, food is kept at a predefined temperature. Food thermometer having probe mechanism is based on touch method. The device has a probe which is used for touching the food and finding out the temperature. The probe is a sensor in food thermometers. Basically, this sensor touches the food and knows the temperature and the system converts it to visual form.
For different types of applications, food cannot be touched for health reasons. So, the probe cannot be inserted in the food. For this kind of food processing system, we use non-touch food processing system. This is done through different methods, one of the methods is the infrared method. This is called thermometer and because of use of infrared, it is called infrared thermometer or IR thermometer. The infrared ray is shown to the food and the temperature is measured. It shows the surface temperature.
Moreover, both devices are used for different reasons. It can be done either using touch or non-touch method. Non-touch method gives surface only, probe can be inserted and hence can measure internal temperature as well.
Both types of thermometers have a temperature limit. It is a programed system in the device. So, there are range of temperature check devices in touch and non-touch methods.
